Strawberries are one of my favorite foods—not just fruits, but foods–and I wanted to make a yummy strawberry frosting for my cupcakes. I don’t have any idea why, other than I wanted to make pink frosting and didn’t want it to be vanilla flavored. Even though I know that’s normal, it just wasn’t what I wanted.
I wanted strawberry frosting.

I thought about different flavorings and even though you can use strawberry extract, I sometimes think extracts can taste a little perfume-y and I honestly didn’t know what kind I would get. The solution?
Freeze dried strawberries!
Here’s the Deal – Freeze dried strawberries would never have occurred to me but Sally’s Baking Addiction created a strawberry cake and she made a fantastic Strawberry Frosting that used them.
I had never noticed freeze-dried strawberries before but I got mine at Trader Joe’s. The package I bought was 1.2 oz., which made 1/3 of a cup less than the recipe calls for. Even at that, everyone who tasted this frosting either said, “Wow!” or “Oh, strawberry!”
Freeze dried food is very similar to dehydrated food but there is even less moisture in it and it has a longer shelf life. The process of freeze drying food also requires less heat so freeze dried foods typically retain a lot of their flavor and smell. That’s a good thing for a great strawberry flavored frosting! I cannot tell you how excited I am about this delicious frosting—I love it SO much! Next time I will get two packages of strawberries and I bet the flavor will be even more intense—I can’t wait! Crazy, I know.
